Sweet Potato Souffle (Olney Inn)


1 quart mashed sweet potatoes

1/2 cup sherry

1/4 teaspoon salt

1/2 cup sugar

1/2 cup black walnuts, chopped

2 eggs beaten

1/2 cup butter, melted


Combine ingredients and whip in blender or food processor until light. Place in casserole or square pan and bake in a moderate oven, 350 degrees, for about 30 minutes until golden brown.

Serves 4 to 6.
