Danas je u prehrambenoj industriji veoma zastupljeno korištenje aditiva koji poboljšavaju vizuelni izgled hrane, a to su boje, kako prirodne tako i sintetičke prehrambene boje. Vrši se bojenje konditorskih proizvoda ( bombone, keks- napolitanke, mančmelo.. ; žvakaće gume, lizalice.. ), kolača, voćnih proizvoda, napitaka, margarina, sira i određenih proizvoda od ribe.

Od davnih vremena, boje su igrale važnu simboličku i emocionalnu ulogu, pa su već stari Rimljani smatrali da ljudi "jedu svojim očima". U to doba je šafran koji daje intenzivnu žutu boju i ukus bio naširoko uzgajan i korišten u prehrani, stoga se zadržao kao integralni dio mnogih tradicionalnih jela u Evropi, Srednjem Istoku i Aziji. No danas se umesto šafrana često koriste jeftinije veštačke žute boje.

Veštačke boje su hemijske supstance tačno poznate strukture koje nemaju prehrambene vrednosti, a dodaju se hrani tokom proizvodnje radi dekoracije. Ponekad mogu imati i fiziološko dejstvo, kao npr. β-karoten ( iz crvenog i narandžastog povrća ) se u telu pretvara u vitamin A koji deluje antioksidativno. Boje se označavaju E-brojevima na deklaracijama proizvoda, kao i ostali dodaci hrani. E-broj služi kao potvrda toksikološke evaluacije i klasifikacije pojedinog dodatka. Boje nose oznake od E-100 do E-180, od kojih su neke prirodnog porekla npr. hlorofil (E-141) i karoten (E-160), dok su druge sintetička hemijska sjedinjenja tačno poznate strukture npr. Zeleno S (E-142) i Smeđe FK (E-154).

Smatra se da je neškodljiva doza ona koja može unositi svakodnevno ceo život. Zadnjih godina, svi dodaci hrani, a posebno boje, intenzivno se istražuju zbog procenjivanja njihove sigurnosti za upotrebu. Mnoge veštačke boje bile su zabranjene u zadnje dve decenije zbog svoje toksičnosti i kancerogenosti (npr. p-dimetilaminoazobenzen ili maslac žuta). Većina boja spada u grupu azo-boja, jer u svojoj strukturi imaju azo grupu (-N=N-) koja deluje kao hromofora. Hromofora je fotoaktivan deo molekula koji apsorbuje svetlost i daje boju nekoj supstanci. Azo-boje se sintetišu iz diazonijevih soli aromatičnih amina i fenola ili anilina.

Veoma je bitna svakodnevna analitička kontrola veštačkih boja, pri čemu se najviše koriste tankoslojna hromatografija ( kvalitativa metoda ) i tečna hromatografija visokog efekta ( kvantitativna metoda ). Razvoj novih analitičkih tehnika određivanja boja ( i ostalih dodataka hrani ) od izuzetne je važnosti za očuvanje zdravlja ljudi, posebno zbog sve češćeg pronalaženja nedozvoljenih boja u namirnicama iz uvoza ( npr. boja Sudan 1 i 4 ).
